Low Carb Rumbledethumps

Traditional dish from Scotland

1 small potato, diced
2 cups defrosted cauliflower florets
1/2 small onion, chopped
2 cups greens, chopped
1/2 tsp. nutmet
Salt and pepper to taste
1 tsp. garlic powder
1 tsp. smoked paprika
Directions
Boil the cauliflower and potatoes until soft. Mash them together to get a chunky mashed potato consistency. In a nonstick cooking pan, saute the onions and greens until soft. Add the salt, pepper, paprika, garlic and nutmeg. Add water as needed to prevent sticking. Add the mashed potato-cauliflower mixture and mix together.

Serving Information

Top with cheese if you like.
