Caramel Apple Streusel Pie

Mouthwatering Delicious! Prize Winner!

6 cups apples, sliced
1 Tbsp. lemon juice
1/2 cup sugar
2 Tbsp. quick-cooking tapioca
3/4 cup old-fashioned oats
3 Tbsp. sugar
1/4 cup cold butter
18 unwrapped caramels
5 Tbsp. milk
1/4 cup chopped pecans
Preheat oven 400°. Mix apples, lemon juice, sugar and tapioca together and set aside for 15 minutes.
Make your favorite 2-crust pie crust and place bottom layer in a 9" pie pan. Pour apple mixture over bottom crust.
Mix until crumbly the oats, sugar and cold butter. Sprinkle over apples. Put on top crust. Bake pie for 45 minutes.
Heat caramels with milk until caramels melted. Add pecans. Pour caramel mixture over hot pie and return to oven for 10 minutes. Cool completely before cutting.
