Jewish Apple Cake

Great with apples, and just as good with peaches!

4 medium apples (or peaches), sliced
4 tsp. sugar
2 tsp. cinnamon
3 cups flour
3 tsp. baking powder
1/4 tsp. salt
4 eggs
2 cups sugar
1 cup oil
1/2 cup orange juice
1 tsp. vanilla
Preheat oven 350° F. Beat eggs until thick. Beat in sugar and oil. Combine flour, baking powder, and salt. Add to egg mixture alternating with orange juice. Add vanilla.
Pour into greased and floured bundt pan 1/4 of mixture. Arrange layer of apple, cinnamon and sugar. Repeat 2 times, finishing with batter. Bake for 60 minutes.

Serving Information

Optional: sprinkle with powdered sugar.
