Whole Grain French Bread with Peaches

Now THIS is French Toast to die for!

6 pieces of whole grain bread
5 c. peaches, peeled & sliced
lemon juice
4 eggs
4 egg whites
1 c. milk
1 tsp. vanilla
2 T brown sugar
1/4 tsp. cinnamon
Lay 6 pieces of whole grain bread in a 9 x 12 pan sprayed with oil. Peel and slice enough peaches to make 5 cups. Toss peaches with enough lemon juice to keep them from browning, and place on the bread. Whisk together 4 whole eggs and 4 egg whites, 1 cup of milk and teaspoon of vanilla. Pour over the bread and peaches. Sprinkle with 2 Tablespoons of brown sugar and 1/4 teaspoon of cinnamon over the pan. Put in fridge overnight.
The next morning, bake at 350ยบ for 40 minutes.

Serving Information

Serve with your favorite syrup or dollop on vanilla yogurt for a healthy alternative.
