Lay 6 pieces of whole grain bread in a 9 x 12 pan sprayed with oil. Peel and slice enough peaches to make 5 cups. Toss peaches with enough lemon juice to keep them from browning, and place on the bread. Whisk together 4 whole eggs and 4 egg whites, 1 cup of milk and teaspoon of vanilla. Pour over the bread and peaches. Sprinkle with 2 Tablespoons of brown sugar and 1/4 teaspoon of cinnamon over the pan. Put in fridge overnight. The next morning, bake at 350º for 40 minutes.
Serve with your favorite syrup or dollop on vanilla yogurt for a healthy alternative.
